The following shows how to remove the testbench file from the compilation list.
1. Open any Quartus II project
2. From the Quartus II menu, click Assignments ⇒ Settings
3. Select Files in Category
4. Left-click to select the testbench file from the File name window and click Remove.

Quartus II does not compile the testbench file for this operation.
Also, even if this operation is performed, the testbench file remains in the project folder.
