The method for file operations on Windows® is as follows.
It is assumed that the .qsys file has been copied.

Copy the *.ip of the component to be changed on Explorer (eg *.ip ⇒ *_cp.ip). By default it is in the IP folder in the same hierarchy where the Qsys files are stored
Open the .qsys to be modified
Right click on the component to be changed and Rename IP Variant File
Save over .qsys and generate
Rename the *_cp.ip copied in step 1 to its original name (eg *_cp.ip ⇒ *.ip)
