There are two methods below.

<Method 1>
Set from Quartus® Prime Assignments menu

Change from -40°C to 0°C in the pull-down of Minimum temperature of Junction Temperature range at Temperature of Settings ⇒ Category ⇒ Operating Settings and Conditions.
With this setting, TimeQuest Timing Analysis will analyze with the 0°C model.

<Method 2>
Configuration from TimeQuest's Netlist menu

You can switch to any timing model by Netlist menu ⇒ Set Operating Conditions.
